Chutney is a glorious spicy-chunky-savoury-sweet fruit invention that can be used as a condiment with meals or desserts. This is only one flavour profile to experiment with so play around and change the fruit, the tea type, the spice level and the flavours.

2C peeled + diced apples and/or pears
1/2C packed brown sugar
1/2C diced onion
1/2C masala chai (brew twice as strong)
1/4C raisins
1/4C apple cider vinegar
1+1/2TSP mustard seeds
1TSP kosher salt
1TSP freshly grated ginger
1/2TSP garam masala
1/4TSP crushed red pepper flakes

01/Place all ingredients into a non-reactive pot on med-high until boiling

02/Turn down to low, cover and cook for 20min

03/Uncover, turn heat up to medium and cook for 15min stirring often

04/When a bit thicker, darker and cooked through use an immersion blender or potato masher sparingly – you want to end up with a nice chunky texture

05/Turn heat back to low and simmer for another 10-20min until chutney is dark, thick and flavourful
